Valentines Truffles

This is one of my favorite, sweet, healthy snacks to make. Your sweetie is sure to love it on Valentines Day!

Energy Truffles

1 ½ cups whole (gluten-free if desired) oats
16 oz almond butter
½ cup blue agave nectar or raw honey
1/3 cup ground flaxseed
1 dark chocolate bar (85% cacao or higher)
Small bowl full of dried coconut

Put oats in a food processor or blender and blend until they assume a powder-like texture. Add almond butter and whole sweetener and mix well. Adjust consistency if necessary. Add ground flax seed and mix. Roll batter into small balls. Melt chocolate in saucepan or double boiler. Dip one half of each Energy Truffle in melted chocolate, then in coconut. Serve and enjoy!
